Bull Run Dry Aged Prime Grade Rib Eye Steaks This holiday season Executive Chef Stephen will be Dry Aging only the highest Prime Grade Rib Eyes to make your holiday season the tenderest yet! Once Chef has completely aged the rib eye for a minimum of 30 days, it will be cut into one pound boneless steaks for you to enjoy for the holidays. Your order will come with recommendations for you to lightly season, grill, or pan roast at home! What is Dry Aging? Dry aging is a process where beef is often wrapped in cheese cloth and hung in a temperature, ventilation and humidity controlled room for 21 to 65 days. Temperature should remain constant between 34-37-F with good air circulation and lower humidity to assist in the drying process. Aging beef is employed to improve two major meat characteristics: taste and tenderness. As the beef dries, moisture evaporates, concentrating its delicious, natural flavor and a significantly more tender cut of beef. $45 for (1) 1 pound steak Advance ordering required.
